Pytti Pana (a traditional Swedish dish)

My husband lived in Sweden for 20 years and moved to the states 3 years ago so this one is for him- to make him feel a little closer to Sweden. for this recipe I just winged it as i remember tasting it ( i only had it 1 time when we went back there for our honeymoon last summer). I used Chuck Roast for this but i would defininetly use a more tender piece of meat for next time. so here it is... enjoy.

shrimp scampi over angel hair pasta

This was a supper quick dish (except for cleaning the shrimp- next time I’m going to splurge and get some fresh cleaned shrimp) the best way to cook shrimp by far is in the oven- I’ve done shrimp 2 ways now in the oven and each time it turned out great.. here you go a shrimp scampi recipe- I read different recipes and then decided to wing it on my own... hope you enjoy this (a lot of the ingredient was eye-balled so feel free to do the same)

CHICKEN WITH MUSHROOM AND BALSAMIC CREAM SAUCE

I made this chicken last night for dinner- it was very creamy without the cream (used milk) – A few pointers: using milk for most recipes instead of cream does cut out a lot of the fat . Marinate your chicken as long as you can. You can do this recipe with or without marinating your chicken before (both options are included in the recipe)

Ground Turkey Breast & Veggie lasagna (no pasta)

OMG- i made a vegetable & turkey meat lasagna last night (with no pasta) and it turned out GREAT!! The idea came from my best friend and it was unbelievable! here is the recipe- everything in here you can substitute for your own favorite stuff- this is a totally "wing it" recipe. I hope you try this and love it as much as we did!

Spinach Roll-ups

I had a lot of fresh spinach left over that I didn’t want to waste... I have seen a lot of recipes like this one- so I decided I would go into my kitchen and whip up something- not following a recipe... so here is what i came up with..

some pointers for myself and others perhaps- I would layer my dough with a little less spinach mixture next time around- and instead of puff pastry I would like to try this with pizza dough- the puff pastry was a little too oily for me. (alot of pictures)

Chicken Breast with Balsamic Glaze

I made this last night, it didn’t take a lot of work which is something I was looking for. I didn’t have time to put anything except a salad on the side but it would be nice to serve this with some white rice or vegetables. Enjoy!!
